Chef-alchemist Ben Pryor of Poco in Bristol shares his fresh, seasonal cocktail recipe in recognition of the city’s gin revolution
You will need
- Psychopomp Gin 35ml
- Collector Vermouth 25ml
- Amalfi lemon juice 10ml
- Agave syrup 10ml
- Amalfi bitters 5 drops
- Bay tincture 3 drops
- Soda to taste
- Combine all the ingredients in a boston glass.
- Stir until the agave is thoroughly incorporated.
- Strain into a highball glass filled with fresh ice and top with soda.
- Garnish with lemon wheels and fresh bay leaves.
