You will need
Duck egg 1 large, yolk and white separated
E18hteen Amaretto 100ml
White sugar syrup 50ml
Fresh lemon juice 50ml
E18hteen Morello Cherry Gin 50ml
Lemon peel a twist
- Fill a boston shaker with ice then add the egg white, amaretto, sugar syrup and lemon juice. Shake vigorously until the mixture has a frothy foam.
- Double strain the mixture into two short tumblers filled with ice.
- Spoon cherry gin on top of the foam so that it bleeds through the drink.
- To serve: place a cherry skewer and the lemon peel on top, then dust with grated chocolate.
