Cocktail at The Club House

You will need

Serves 2

Duck egg 1 large, yolk and white separated
E18hteen Amaretto 100ml
White sugar syrup 50ml
Fresh lemon juice 50ml
E18hteen Morello Cherry Gin 50ml

To garnish

Cherry skewer
Lemon peel
a twist
Grated chocolate


  1. Fill a boston shaker with ice then add the egg white, amaretto, sugar syrup and lemon juice. Shake vigorously until the mixture has a frothy foam.
  2. Double strain the mixture into two short tumblers filled with ice.
  3. Spoon cherry gin on top of the foam so that it bleeds through the drink.
  4. To serve: place a cherry skewer and the lemon peel on top, then dust with grated chocolate.
