Cosy bakery with fabulous coffee on Exeter’s Queen Street

It’s the smell that will lead you to The Exploding Bakery, one of Exeter’s favourite coffee haunts. This is primarily a bakehouse, so the warmth of industrial ovens and wafts of home cooking spill out onto the paved area outside, drawing customers from the train station entrance a few yards away.

It was a natural step for coffee-loving baker and co-owner Oli Coysh to have his own onsite machine – and to apply the same level of care to the brew served as he does to his cakes. Monmouth is the house coffee, but there’s a second grinder for various guest coffees, including Clifton, Round Hill, Square Mile and Climpson & Sons. He also uses “proper” milk: organic and non-homogenised from local dairy, Ashclyst Farm.

Oli specialises in tray bakes cakes for coffee shops and his creations are matched to speciality coffee. ‘We use a little less sugar and concentrate on the actual flavour of the cake, with the intention of not overpowering your drink,’ he says. Cosy up inside, grab a table on the pavement or take your coffee to-go.
