Hidden north Devon gem
Neatly tucked between a patchwork of green fields and wild hedgerows, this country house hotel is the perfect retreat for those seeking peace, quiet and comfort in the British countryside.
Thirty-nine beautifully styled bedrooms give overnight guests the opportunity to witness north Devon’s unrivalled landscape shift from crisp mornings to hazy afternoons and peachy evening skies, while day-trippers stopping by for lunch can watch birds hop around in the South West summer sunshine.
Whether you’re spending a couple of days making the most of Highbullen’s amenities (Elemis spa, golf course, tennis courts, swimming pool and gym to name a few) or meeting friends for dinner, there’s a variety of dining options for all occasions. For two AA rosette dining, book a table at the Devon View Restaurant. If it’s casual eats you’re after, head to the new-for-2019 Supper Room. And for special occasions? Sip champagne and tuck into hot-from-the-oven scones at the luxe Laura Ashley The Tea Room.
Head chef Stephen Walker fashions showstopping dishes using locally sourced and seasonal ingredients. The menu shifts daily depending on what fantastically fresh ingredients Stephen and his team can get their hands on, though visitors can expect to feast on the likes of hand-picked Devon lobster salad with baked potato, green apple and dill, roasted rack of Exmoor lamb with girolles, crispy sweetbread, summer beans and feta, followed by passion fruit souffle with mango sorbet.
With 127 acres of rolling hills surrounding the attractive country house, it has become a sought-after spot to tie the knot. Couples can choose between the Morning Room, Croquet Lawn or the stunning Palazzo for ceremonies, while wedding breakfasts are hosted in the stunning Devon View Restaurant.
