Spirit of a new year

Jason King, restaurant manager at Salcombe Harbour Hotel, shares two faves from the chic hotel’s bar menu

You will need

For the passionfruit star

Serves 1

Vanilla vodka 25ml
Passoã 40ml
Passionfruit puree 5 tbsp
Apple juice a splash
Passionfruit half, to garnish
Prosecco one shot

For the elderflower mojito

Serves 1

Lime wedges 5
Elderflower cordial 25ml
Mint leaves 8 (1 to garnish)
Crushed ice
White rum 50ml
Soda water a dash

Method

For the passionfruit star

  1. Half fill a cocktail shaker with ice, then add the vodka, Passoã, passionfruit puree and apple juice. Shake the mixture for 20 seconds.
  2. Strain over a chilled martini glass without letting any ice come through.
  3. Garnish with passionfruit and serve with a shot of Prosecco.

For the elderflower mojito

  1. Squeeze and drop the lime wedges into the glass, then add the elderflower cordial and muddle together.
  2. Clap the mint in your hands and place on top of the mixture.
  3. Fill half the glass with crushed ice and pour in the rum.
  4. Using a muddler spoon, drag the mixture through the ice, then fill the glass with more ice and top up with soda water.
  5. Give it one more stir and garnish with mint.
