The mixologists at Salcombe Gin share their New London Light perfect serve

- Ice
- Salcombe New London Light 50ml
- Strong green tea 25ml, chilled
- Sage syrup 25ml
- Lemon juice 25ml
- Aquafaba 15ml
- Sage to garnish
- Fill a Nick & Nora glass with ice to chill and set to one side.
- Add the New London Light, green tea, sage syrup, lemon juice and aquafaba to a boston shaker with plenty of ice and shake for 15 seconds.
- Remove the ice from the Nick & Nora glass.
- Double strain the mixture into the glass.
- Garnish with sage.
