Inoshishi Izakaya in Frome has upped its umami game with a revamped menu designed to provide a sophisticated experience for diners

Frome’s izakaya (Japan’s concept of a sake bar with food) recently refined its menu to champion local and seasonal produce.

Salmon sashimi with picked ginger, and miso soup with wakame and tofu are among two of the seven small plates, while karaage chicken with kewpie, koji roast lamb with sake braised fennel and pink bream with pickled kohlrabi and sesame broth give three of the six large plates wow factor. Puddings include the likes of matcha fondant with miso caramel, and yuzu posset.

The inspiration behind the fusion menu came from a research trip to to Japan’s must-visit eateries. ‘We got a hit list from Margot Henderson,’ says Inoshishi’s co-founder Rupert Toms, who embarked on the culinary tour with head chef Jordan Confino prior to the restaurant opening late last year.

Delicious bites are accompanied by Japanese-inspired cocktails such as razuberi sake tea, expertly curated by Josh Knox (who also makes the house kimchi, FYI).

Inoshishi Izakaya is open for lunch 12pm – 3pm and dinner 5.30pm – 9pm, Wednesday to Saturday. It also offers a takeaway service. Keep ’em peeled for news on Inoshishi’s sister site The Prickly Pear pub in Bruton – it’s set to reopen next year following an extensive refurbishment.
