Chef Masaki Sugisaki of Dinings SW3 will swap London for Cornwall in a two-part residency this summer

Known for his fresh interpretation of Japanese Izayaka (a cooking style blending Japanese and European cuisines), Masaki Sugisaki is heading to Cornwall for a two-part residency this summer. The traditionally trained Japanese chef will craft a bespoke seafood tasting menu at The Idle Rocks in St Mawes on July 7, followed by hosting two days of informal feasting at Tavola at Porthscatho Bay on July 9-10.

Masaki’s Cornish residencies are inspired by his lifelong love of the county and the bounty of seafood found along its coast. He says: ‘Cornwall is my favourite place in the world. I try to get down there as much as possible to meet with the fisherman and always come back with so much inspiration. To finally be able to bring Dinings SW3 down to Cornwall is a long-term ambition of mine, and it’s amazing that we’re able to make it happen this year in two iconic locations.’

Working alongside The Idle Rocks exec chef Dorian Janmaat, Masaki’s seven-course seafood supper on July 7 will feature dishes such as salmon tartare sushi canapés; crab open rolls; rock oyster ceviche with yuzu, pickled shallot and caviar; and sea bass with saké steamed koji. Surf and turf will be the showstopping main course, featuring St Mawes lobster and British wagyu beef. Tickets, which include dinner, paired wines from Knightor and saké from World of Saké, cost £150 and are available from June 8 on The Idle Rocks website.

The two-night residency at Tavola will be a more casual affair and the menu will feature the likes of yuzu-dressed native oysters, grilled hand-dived scallops with wasabi salsa, and seafood dashi paella. Tickets cost £90 per person, including two glasses of saké, and will go on sale on July 1 on the Hidden Hut’s website (Tavola’s sister venue).
