Venison kofta kebabs

Serves    6
  • Minced venison 500g
  • Fresh breadcrumbs 2 tbsp
  • Onion 1, peeled and grated
  • Cumin 1 tsp
  • Dried mint 2 tsp
  • Dried oregano 2 tsp
  • Chilli flakes 2 tsp
  • Paprika 2 tsp
  • Salt 1 tsp

Kit:

  1. In a large bowl, mix the venison mince, breadcrumbs and onion until combined. Add the cumin, mint, oregano, chilli, paprika and salt and combine using your hands.
  2. Divide the mixture in to 6 equal balls. Firmly shape the balls around the metal skewers, making sure the meat is spread to an even thickness.
  3. Preheat the barbecue for direct high heat. Once hot, brush the cooking grate clean using a grill brush. Place the venison koftas on the grate and cook for 5 minutes. Turn the koftas and cook for a further 5 minutes or until cooked through.
