The team at Rodda’s in Cornwall share their recipe for clotted cream and mince pie ice cream

Makes    1 large tub of ice cream
  • Sweetened condensed milk 397g can
  • Double cream 300ml
  • Rodda’s Cornish clotted cream 227g
  • Vanilla extract 1 tsp
  • Mince pies 6, roughly chopped into small pieces
  1. Put the condensed milk, double cream, clotted cream and vanilla extract into a large bowl.
  2. Beat with an electric whisk until thick and the mixture appears stiff.
  3. Add the chopped mince pies to the creamy mixture and fold in with a spatula until combined.
  4. Spoon the mixture into a large container or loaf tin then cover with clingfilm. Freeze the clotted cream and mince pie ice cream until solid.
