For the infused gin:

Cinnamon stick 1
Fresh grapefruit 1 slice

  1. For the gin infusion: add all the ingredients to the bottle and infuse for 3 – 7 days depending on taste, then sieve.
  2. For the negroni: mix all ingredients into an old fashioned glass half filled with ice and stir to dilute slightly, 20 or so turns. Garnish to finish.

Chef’s tip: ‘Nothing puts a smile on my face like a well-made negroni. We have taken it a step further using Tarquin’s Cornish Gin and infusing with some simple Christmas spices.’
