English summer cup poptails recipe

This English summer cup poptails recipe is fruity, refreshing, low fat and definitely not for the kids

Serves    6
  • Super-fine sugar 50g
  • Pimm’s 4tbsp
  • Ginger beer (or lemonade) 250ml
  • Strawberries 150g, sliced
  • Apples 50g, sliced
  • Mint 18 small leaves
  1. Place the sugar and ½ cup (125 ml) water in a saucepan and slowly bring to a boil, allowing the sugar to dissolve.

  2. Let simmer gently for 5 minutes, then remove from the heat.

  3. Add the Pimm’s and ginger beer or lemonade. Let cool completely.

  4. Divide the strawberries, apple slices, and mint leaves among six popsicle moulds. Pour over the Pimm’s mixture and insert the popsicle sticks.

  5. Place the moulds in the freezer for 6 hours, until frozen solid.
