This naturally festive tipple has notes of fiery ginger and a hint of rum butter

- Method
- Dark or spiced rum 50ml
- Sugar syrup 25ml
- Lime juice 15ml, freshly squeezed
- Ginger beer 85ml or to taste
- Lime wedge to garnish
- Take a chilled long glass and fill with plenty of ice.
- Combine the rum, sugar syrup and lime juice in a mixing glass and give it a stir.
- Pour the rum mix over the ice in the glass and top up with ginger beer. Stir gently.
- Rub a wedge of lime around the rim then drop it in the glass.

Method
